New! Unaged & Low Histamine!
Our melt-in-your-mouth filet mignon... packaged and frozen within 6 days of harvest. A little luxury for families watching their histamine intake.
Histamine naturally builds up in meat as it ages. Most steaks are aged for weeks to boost tenderness (ours included!). But if your body is sensitive to histamine, that aging can work against you. Good news: the tenderloin is already the most tender cut on the animal. It doesn’t need weeks of aging to deliver that buttery, fork-tender bite.
Speed is everything. Our cattle are harvested at a local, family-owned butcher shop, then packaged and frozen within 6 days (not the usual weeks). Freezing locks in freshness and stops histamine from building up. Same regenerative, grass-fed and finished beef you love. Just faster from pasture to freezer.
These steaks will make anyone feel like they’re at a fine dining restaurant... at a fraction of the cost.
For the lowest histamine, cook them straight from frozen! Sear in a hot cast iron skillet for 3-4 minutes per side, then finish in a 275°F oven until they reach your preferred doneness (130°F for medium-rare). Top with our mushroom & herb sauce for the full experience.
When you raise beef regeneratively, it's not only better for the planet, but it also packs more nutrition. Regeneratively raised beef can have up to 75% more nutrient density compared to conventional beef.
Did you know? For every 1lb of beef raised regeneratively, about 3.5lb of carbon is sequestered. But, for every 1lb of conventional feedlot beef, about 26lb of carbon is emitted. Woah!
So, for each 6oz Nourished by Nature regenerative beef tenderloin filet you buy, you're sequestering 1.3lb of carbon right back into our soil. Way to be a changemaker!
Will last a year in the freezer. Cooking from frozen keeps histamine lowest. If you thaw, use a bowl of cold water (the fastest way) and cook as soon as it’s ready. Eat leftovers within a day, or freeze them right away.
