Stuffed Peppers
These stuffed peppers are a simple, hearty way to use fresh garden peppers and ground beef. We fill them with seasoned beef, onions, garlic, tomatoes and rice, then top them with plenty of cheese and bake until the peppers are tender and everything is warm and bubbly. It's the kind of meal that makes a great use of what you already have on hand and is especially good when the garden is giving you more peppers and tomatoes than you know what to do with!

Ingredients

  • (5 Large) Bell Peppers, seeded and sliced in half
  • (2 Cups) Cooked Long Grain Rice
  • (2 lbs) Ground Beef - 85% Lean
  • (1 Medium) Onion, chopped
  • (1 Tbsp) Garlic, Minced
  • (1 Tbsp) Italian Seasoning
  • (4 Medium Sized) Tomatoes, diced
  • (1 Tbsp) Olive Oil
  • (2 Cups) Shredded Cheese, divided
  • (1 tsp) Fresh Parsley, chopped
  • (To taste) Salt and Pepper

Directions


Pre-heat the oven to 350 degrees and grease the bottom of a 9x13 in pan with olive oil.
Start by sautéing the ground beef in a cast iron skillet over medium heat.
While the ground beef is cooking, prepare the peppers.

When the ground beef is about half cooked, add the onions, garlic, Italian seasoning, salt and pepper and cook until beef is nicely browned. Add the tomatoes and cook a few mins longer. Add rice and half the cheese and mix thoroughly.

Once the stuffing is mixed, lay the peppers flat in the 9x13 in pan. The peppers we grow in our garden don't always have nice round bottoms so I prefer to lay the peppers on their side. 
Fill the peppers with the stuffing until they're heaping. Top with the remaining shredded cheese and freshly chopped parsley.

Cover with tin foil and bake for 30 mins covered. Remove the tinfoil and cook for another 15 mins.
Let rest for 10 mins and enjoy!
